Wheat beers are usually top-fermented & the flavor varies considerably depending upon the specific style. One of the main varieties is the Belgian witbier which is based on the Belgian tradition of using flavorings, such as coriander & orange peel. Another variety is the German weissbier based on the tradition of mixing at least 50% wheat to barley malt to make a light-colored ale. Both the Belgian witbeir & the German weissbeier were termed "white beers" because they were historically paler than other beers at the time. US breweries brew wheat beers using special wheat yeasts; however, those beers tend to produce a less fruity taste than the Bavarian styles. (* = on tap)
