Our first Farmhouse Ale ever brewed at McCoy’s! This traditional Saison was inspired by
those looking for refreshment during the summer harvest, as well as, the farmers who brewed them. This Saison is deliciously light & refreshing with a straw-golden color.
Brasserie Dupont, Belgium; 7.5% abv
Brewed at one of Europe's last farmhouse breweries, Foret is Belgium's only certified organic ale. 100% organically raised hops, barley & pure well water. Boldly dry & beautifully balanced with herbal notes; this beer is bottle-conditioned & suitable for cellaring. Enjoy with sharp cheeses, roasted meats (particularly pork) & fish.
While the style is generally known for its light body and subtle spice, the Saison Imperiale, created in 2006, is a bolder, "mega" interpretation of the style. Light amber in color with funky wild yeast notes & spice to the nose. With a bit more malt character, body & hop notes as are appropriate to the "Imperiale" style.
The gold medal-winning saison (Mondial de la Biere, Montreal, 2008) was the inspiration for this limited edition ale. They brewed a slightly stronger version that was dry-hopped followed by bottle-conditioning with various yeasts (including Brettanomyces, which is a wild strain that imparts an earthy quality). Though this ale is given three-months of bottle-aging prior to release; further cellaring will continue to enhance the "brett" character.
